Raspberry MELT Chocolate Mousse

With just a few simple ingredients, you can create a show-stopping dessert that’s sure to impress!

 

Ingredients


  • 160 g dark chocolate chips

  • 60 ml heavy cream

  • 1/2 Raspberry MELT
  • 2 large eggs, separated

  • 50 g granulated sugar

  • 1/2 teaspoon vanilla extract

  • 240 ml heavy whipping cream (for folding and topping)

  • Fresh raspberries and mint leaves for garnish (optional)

 

Instructions


  1. Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and 1/4 cup of heavy cream. Microwave in 30-sec intervals, stirring in between, until smooth and fully melted. Let it cool slightly.

  2. Add Raspberry Flavor: Stir in the Raspberry MELT(see the recommended amount on the package) into the melted chocolate mixture until fully incorporated.

  3. Beat Egg Yolks: In a separate bowl, whisk the egg yolks and granulated sugar together until pale and creamy. Add the vanilla extract and mix well.

  4. Combine Mixtures: Gradually fold the chocolate mixture into the egg yolk mixture until smooth and well combined.

  5. Whip Egg Whites: In another clean bowl, beat the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

  6. Whip Cream: In a separate bowl, whip the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully combined and smooth.

  7. Chill: Spoon the mousse into individual serving dishes or cups. Cover and refrigerate for at least 2 hours, or until set.

  8. Serve: Before serving, garnish the mousse with fresh raspberries and mint leaves if desired. For an extra touch, drizzle with more melted chocolate or a sprinkle of cocoa powder.
