Blueberry Lemon Muffins

Treat yourself to the delightful flavor combination of blueberries and lemon in these light and fluffy Blueberry Lemon Muffins! With a touch of Blueberry MELT flavor and the fresh zest of lemon, these muffins are a perfect balance of sweet and tangy, making them a delicious option for breakfast, snack time, or dessert.

 

Ingredients:

 

  • 180 g all-purpose flour

  • 100 g sugar

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 120 g milk

  • 57 g melted butter

  • 1 egg

  • 2/3 Blueberry MELT

  • Zest of 1 lemon

  • 75 g fresh or frozen blueberries

 

Instructions:

 

  1. Preheat oven to 190°C and line a muffin tin with paper liners.

  2. In a bowl, mix flour, sugar, baking powder, and salt.

  3. In another bowl, whisk milk, melted butter, egg, Blueberry MELT contents (see the recommended amount on the package) and lemon zest.

  4. Combine wet and dry ingredients, then fold in blueberries.

  5. Spoon the batter into the muffin tin and bake for 18-20 minutes or until a toothpick comes out clean.

 

Once baked to golden perfection, let the muffins cool slightly before enjoying. Each bite bursts with juicy blueberries and citrusy goodness. Serve them warm or save a few for later—they’re sure to be a favorite any time of day!
